Brown Butter New York is a catering and speciality foods company. It was a joint partnership with self-taught Bronx-born Chef Marquis Hayes. We launched the brand in 2012 with a exclusive dinners for the fashion elite, artists, writers, models, and photographers. We launched the catering business and provided high-end farm fresh meals for companies like Ralph Lauren, Club Monaco and Harry's.
In 2012, we opened our first restaurant 22 Chestnut in Cooperstown, NY in partnership with local farmer, Susan Bruss (Olli's farm). Other localized projects included a pop up in Noho called CRAY, which featured a New Orleans-inspired menu.
As one of the founders of BBNY, I handled all the design and marketing as well as all the day to day production and accounting for the catering business.
